Vegan MoFo: Mushroom Stroganoff


This is one of our easy weeknight dinners. Although I love to fluff around and do fiddly things on weekends, after work I just want something fast. Dinner tonight was on the table in 30 minutes from start to finish, which is pretty good for a weeknight dinner. 

 Mushrooms are one of my favourite vegetables. Fried, pureed into pate, in a sauce, on pizza, stuffed... They have such a strong flavour, who needs meat to make this classic dish? I sauteed onions and garlic with sweet paprika, a pinch of salt and some pepper. Then I added an assortment of mushrooms including shitake which I think have a hearty texture, some port, a dash of red wine, and some lemon zest. When they were just about done I swirled in some tofutti and lemon juice, and some fresh dill (tradition calls for parsley- but some volunteer dill plants have popped up among my broad beans, and it goes so well with mushrooms and lemon). I served tonight's dinner with rice, but it would be just as nice with pasta like some home made parpadelle or fettucine.
